I am a firm believer that you must take advantage of seasonal fruit. In August, the fruit in season are:

  • Blood oranges
  • Custard apples
  • Fuji apples
  • Grapefruit
  • Kiwifruit
  • Lemons
  • Limes
  • Mandarins
  • Nashi
  • Navel oranges
  • Pineapple
  • Rhubarb
  • Strawberries
  • Tangelo

I was looking around for a summer salad and found, Citrus Apple Spinach Salad. I love the idea of a sweet but citrus combination. I think it would go well with pretty much anything you might want to grill.

I love apples and oranges. This is the time of year to take advantage of what is in season. I love blood oranges, especially.

This recipe calls for any type of apples and oranges.

Ingredients

  • 6 ounces fresh baby spinach
  • 2 apples, cored and diced
  • 2 oranges, peeled and sectioned
  • 1/4 cup fennel bulb, shaved very thin
  • 1/4 cup pecans, toasted
  • 1/4 cup dried cranberries
  • 1/4 cup crumbled blue cheese
  • 2 Tablespoons scallions, minced

Directions

Place spinach, apples, orange sections, fennel, pecans, dried cranberries, blue cheese and scallions in a large salad bowl. Toss with enough dressing to lightly coat the salad. Serve immediately.


The finishing touch is a delicious salad dressing. I happen to love these three dressing with this salad. Of course, you can use them with pasta, and veggies too.
