Bacon Cranberry & Brie Toast


1. Mix Brie and New England Cranberry Relish slightly and spread on toast.

2. Sprinkle bacon over toast and garnish with fresh rosemary, if desired.


1 slice bread, toasted
1 ounce Brie cheese, softened
1-2 Tablespoons Stonewall Kitchen New England Cranberry Relish
1 slice cooked bacon, crumbled
1 sprig fresh rosemary for garnish, optional


Lobster & Avocado BLT Toast


1. Spread Basil Pesto Aioli or Farmhouse Mayo on toast.

2. Layer bacon, arugula, tomatoes, avocado, and lobster.


1 slice bread, toasted

1 Tablespoon Stonewall Kitchen Basil Pesto Aioli or Farmhouse Mayo

2 ounces great-quality thick-sliced smoked bacon (about 2 slices), cooked

Fresh arugula

2 small tomatoes, sliced

1/2 ripe avocado, sliced

1 ounce cooked fresh Maine lobster meat

Homemade Ricotta & Jam Toast


1. For the ricotta cheese, stack 4 large squares of cheesecloth in a colander, leaving an overhang.

2. Combine milk and buttermilk in a large, heavy pot. Place pot over high heat. Stir almost constantly as mixture heats and curd begins to form. When temperature registers 175-180 degrees F curds will separate from the whey and float to the top. Turn off heat.

3. Using a slotted spoon, transfer the curds to the prepared colander. Gather cheesecloth and press gently. Do not remove too much liquid or the ricotta will be dry. Let rest in colander 15 minutes.

4. Transfer ricotta to a storage container. Sprinkle with a little salt and stir. Cover and chill for about 2 hours. Can be made 1-day ahead, keep chilled.

5. For the toast, spread homemade ricotta cheese on toast. Spread jam over ricotta cheese and sprinkle pistachios on top.


For the homemade ricotta cheese:

8 cups whole milk

2 cups reduced-fat buttermilk


For the toast:

1 slice bread, toasted

2 Tablespoons homemade ricotta cheese

1-2 Tablespoons Stonewall Kitchen Strawberry Jam or any fruit jam

1 Tablespoon shelled pistachios, toasted

You do not have to limit these topping just to toast. You can easily add them to bagels or pita pockets.
